EAA and Javi's Tacos have partnered up, making Javi's Tacos the exclusive Mexican food provider for all EAA-related events. Additionally, customers wearing an EAA jersey will receive a 10% discount off their total bill when dining in at any of Javi's Tacos' locations, excluding alcohol and taxes, and limited to one discount per group per day.

Javier Trujillo is the owner of Javi's Tacos, a Mexican restaurant with three locations in Omaha, Nebraska. He started his business during the COVID-19 pandemic after leaving his corporate job as a regional manager. Javier's interest in the food industry stemmed from his mother's food sales at church parking lots and his experience working at a small buffet restaurant and a large very recognized sandwich shop while in high school. He faced numerous obstacles when starting Javi's Tacos, including limited resources and skepticism from banks. Ten banks turned him down before he opened his first location. Since then, he has expanded his business with the opening of three locations and two food trucks. This passion and drive for success is one of the reasons that EAA wanted to partner with Javier and his team at Javi's Tacos!

Javier believes that producing quality food that people enjoy is the most important thing, rather than being "authentic" to a narrow definition of Mexican cuisine. He argues that the notion of "authentic" Mexican food is subjective. Javier's food is influenced by the food his mother cooked when he was a child, along with his own creativity and experimentation. Despite criticisms that Javi's Tacos was not "authentic Mexican food," Javier remained determined to produce quality food and create a unique experience for his customers.

Running a successful business requires a lot of hard work, and Javier Trujillo knows this better than anyone. He struggles with time management, often spending more time than he should with customers and getting backed up with other tasks.
